Introduction

Ingredients

4Tbl Olive oil
One container fresh sliced mushrooms
One package frozen artichoke hearts, thawed and chopped
One cup frozen spinach, thawed.
Fresh or minced garlic and onion to taste
4 Whole eggs
4 egg whites
1 cup 1% fat cottage cheese
2 light english muffins lightly toasted and quartered.
Directions
Spray bottom and sides of a standard size quiche dish or pie plate. Line bottom with english muffin pieces.
Cook mushrooms in olive oil. Add spinach, artichoke hearts, garlic and onion. Set aside.
In a large bowl beat eggs with cottage cheese.
Spoon vegetable mixture over muffin pieces (there may be some left over, save it for another recipe)
Pour egg and cheese mixture over whole thing.
Preheat oven to 350. While oven heats, muffins will soak up some of the egg mixture.
Bake approximately 40 minutes or until a knife in center comes out clean. Do not over bake.
Cut into 8 pieces.
