Ingredients

1/2 pound kidney beans
1-2 cups water (to cover hock)
1 small smoked ham hock
1/2 lb ground sausage and beef
! 12 oz can of diced tomatoes
1 green or red pepper chopped
1 small onion chopped
1 or 2 hot peppers chopped
Chili Powder to taste
Onion powder to taste
Ground pepper flakes if desired.
Directions
Night before - soak kidney beans with water to cover cover.
Cover ham hock with water. When simmering, add presoaked beans. Simmer for approximately 2 hours. Remove and strip lean meat from hock. Discard fat and bone. While hock is cooking saute ground sausage and beef combination. Add all chopped peppers and onion. Continue saute unitl onion is clear, meat is no longer red, and peepers are soft. Add cooked sausage/vegetables and diced tomatoes to pot with beans. Add salt and pepper and seasonings to taste. Continue cooking for 1 hour unitl mixture is creamy and as thick as you like. Cook rice as directed on package, computing the time so that rice is done at same time as bean mixture. Serve hot over cooked rice. Enjoy!
