Great one pot winter dish. Very nutritious, and kids love it. Skip sausage to make vegetarian. Great one pot winter dish. Very nutritious, and kids love it. Skip sausage to make vegetarian.

Ingredients

    Lentils, potatoes, sweet potatoes, mild italian sausage (optional)

Directions

Put lentils to soak in water. Chop onion and green pepper finely. Sautée onions, green pepper and garlic in olive oil. In the mean time, cut up sausages (if used ) in 4 or 5 pieces. emove veggies from pan and brown (if used). While it's browning, start peeling and cutting potatoes and sweet potatoes. Drain lentils and add them to the sausage. Sautee lightly. Add the the veggies, water and bay leaf. Add potatoes and sweet potatoes. Boil until potatoes are done and lentils are tender. Makes about 10 bowls. Tatses better the next day. Serve with crusty bread.
