My mom used to make this delicious version of French toast for breakfast when I was growing up as a great alternative for getting rid of overripe bananas. It makes regular French toast seem bland in comparison! Ingredients

3/4 c skim milk
1 egg (whole large)
2 egg whites (from large eggs)
1 medium overripe banana
1 1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
10 slices bread
Tips
This is excellent topped with a low calorie maple syrup or your favorite yogurt (I like strawberry).
Directions
Heat a large non-stick skillet on stove top over medium low to medium heat. Spray lightly with cooking spray.

Place all ingredients, except bread, in a blender. Mix until well combined.

Pour into a large, shallow bowl or container. Lightly dip individual bread slices into mixture, coating both sides, then place in skillet.

Cook each side of French toast until it is deep brown in color, but not black or burnt. (golden brown will be undercooked)

Makes approximately 10 pieces of French toast. (Because some breads soak up more liquid than others you may get more or less out of the egg mixture, depending on what kind of bread you use. If you do, divide 296 by the number of pieces of French toast you made up to get the calories. Then, add that number to the amount of calories in a slice of the bread you used)
