Ingredients

1 27 oz. - Can of whole green chiles, drained.
16 oz - Monterey jack or pepper jack cheese.
6 - Eggs
1.5 cups - Heavy whipping cream
1 tsp. - Chili powder
1/2 tsp. - Cumin, ground.
8 oz. - Cheddar cheese
Directions
Grease 13x9 pan. Slice open half of the chiles and lay flat on the bottom of the pan, skin side down, in a single layer. Top peppers with the jack cheese. Arrange the remaining chiles on top of the cheese skin side up.
Beat together the eggs, heavy cream and spices until well blended. Pour egg mixture over peppers and cheese evenly. Top the casserole with the cheddar cheese and place in a 350 degree oven for 35 minutes. The top should be bubbly and golden brown.
Let it cool for 10 minutes then serve.
