Ingredients

    * Trader Joe's Masala Simmer Sauce, 425 gram(s)
    * Eggplant, 425 grams
    * Tofu, extra firm, 397 grams
    * *Mixed Vegetables (Broccoli, Cauliflower, Carrots) Birds Eye - 87g, 2.5 cup

Directions

Drain tofu. Cut into pieces and fry using cooking spray.

Combine vegetables and sauce. Simmer for 15 minutes.

Add tofu, simmer for 15 minutes.

Serve over rice
