Introduction

Salmon marinated in a brown sugar, bourbon whiskey and apple juice marinade and served with toasted pecans. Salmon marinated in a brown sugar, bourbon whiskey and apple juice marinade and served with toasted pecans.

Ingredients

    2 lbs. salmon filets (8 4-oz. servings)
    1/2 c. brown sugar, packed
    1/2 c. apple juice, unsweetened
    2 oz. bourbon whiskey
    1 tsp. black pepper
    1 tblsp. butter
    1 c. pecan halves
    1/2 tsp. salt

Directions

For marinade, combine the brown sugar, apple juice, bourbon whiskey and black pepper. Marinate salmon in marinade for 1 to 2 hours. Melt butter and add salt to it. Pour over pecan halves--stir to coat. Preheat oven to 350 F. Place pecans on baking sheet and bake until lightly toasted. Remove from oven and cool. Set aside. Remove salmon from marinade. Place on baking sheet lightly coated with baking spray. Bake in 400 F oven for 20 to 25 minutes or until done. Top with pecan halves when ready to serve. Makes 8 4-oz. servings.
