Ingredients

    1 lb firm ripe tomatoes
    1/2 cucumber
    1 onion
    1/4 c grapeseed oil or olive oil
    6 Tablespoon nonfat yogurt
    2 Tablespoon chopped fresh parsley or 1 Tablespoon dried
    1/2 teaspoon plain white vinegar
    salt and pepper to taste
    chives, to garnish

Directions

Seed and chop tomatoes. Chop the cucumber and onion into small pieces. Combine all the dressing ingredients and season to taste. Pour over the salad and toss together. Spinkle the pepper and salt and garnish with chives. Can be serve with crusty bread.
