    3/4 lb spaghetti
    1 1/2 lb tomatoes seeded and cut into 1/2-inch dice (about 3)
    1/2 lb fresh mozzarella cut into 1/4-inch dice
    3/4 cup chopped fresh basil, plus whole leaves for garnish
    6 tbsp olive oil
    2 tsp red wine vinegar
    1 clove garlic minced
    1tsp salt
    1/2 tsp fresh ground black pepper
    3 tbsp parmesan cheese


In a pot of boiling salted water, cooks spaghetti until done, about 12 minutes.

Combine tomatoes, cheese, basil, oil, vinegar, garlic, salt & pepper in a large bowl.

Drain pasta toss with tomato & cheese mixture. The heat of the spaghetti will soften cheese slightly.

Sprinkle with parm. cheese and basil leaves

    YUM! I don't even like tomatoes but I LOVED this! It was so light yet filling and had a completely different taste from what I usually cook. I will definitely make again! - 3/2/09
