Number of Servings: 4

Ingredients

    1 tbsp Olive Oil
    1/2 medium onion
    1/2 red bell pepper chopped
    2 cups Water
    1 cup brown rice, short-grain
    1/4 cup finely chopped parsley

Directions

To make the rice, heat oil in a medium saucepan. Add onion and bell pepper; cook 3 min. Add water and rice; bring to boil. Reduce heat; cover and simmer 50 minutes or until rice is tender and liquid is absorbed. Fluff with fork, stir in parsley. Season w/salt and pepper if desired.

    1.5 carbs per serving didn't look right, so I entered all the ingredients in the recipe calculator and it came out different -less calories and more carbs, etc. I tried it and it's good. My hubby had to add stuff to his rice (chinese mustard and sweet and sour sauce) but I liked it. : - 4/21/12

    I had this same thing at Ruby Tuesday as a side instead of fries, and they put shredded cheese on top. That was definitely the deal maker! Try it with cheese on top! - 3/15/09
