1 1/2 C whole wheat flour
2 tsp baking powder
1 tbsp cornstarch
dash of salt
1 tsp vanilla extract
1 tbsp orange juice (preferably fresh)
1 1/2 C Light Plain Soy Milk
3/4 C frozen blueberries, thawed
Directions
In a medium bowl, combine all your dry ingredients. Place blueberries in a small bowl and coat with one spoonful of dry mix; it will keep from turning your batter blue.
Add the wet ingredients; stir to combine. Mix in blueberries.
