Ingredients

    1 pound boneless skinless chicken tenders

    box of mexican or spanish rice prepared per instructions

    2 Tbsp Garlic powder

    small can (11 oz)black beans drained

    2 bell pepper any color or mix and match

    medium onion- cut in strips

    2 packs of fajita seasoning ( I use walmart brand)

    1 can rotel (or generic brand diced tomatoes and green chilies)

    1 bag Mexican cheese

    small bag of corn chips

Directions

Preheat oven to 350

mix one seasoning pack per directions in large bowl add chicken.

cook chicken on stove top in marinade set to side
.
Sautee peppers and onions in butter(or oil) and garlic powder set aside

mix the other fajita seasoning(dry mix to not prepare) with rotel

add drained and rinsed black beans into cooked mexican or spanish rice spread in greased 13x9 baking pan

place cooked chicken over rice mix

place sauteed pepper and onion mix over chicken

sprinkle one cup of cheese over peppers and onions

cover with rotel/seasoning mix

bake about 20 minutes

remove

top with remaining cheese

top with crushed corn chips

bake until cheese is melted

    This was really good..I made a few changes, added mexi-corn to the beans and had some chicken fajita strips that were already seasoned/frozen, so I used them instead of regular chicken tenders. My family LOVED this meal...I will make it again!! - 5/2/09
