Introduction

Ingredients

    10 large Calamata olives (any sharp flavored, black olive will work) pitted
    1tbs extra virgin olive oil
    6 leaves basil
    3 cloves garlic
    2 tbs parmesean cheese

Directions

Place all ingredients, except the olive oil and parmesean, in the bowl of a food processor. Puree. As mixture begins to stiffen add olive oil in a stream. When mixture is of desired consistency, add parmesean an pulse til incorporated. This misture can be served spread on toast rounds as an appetizer or can be tossed with your favorite pasta. Delicious! Makes 10 - 1 tbs servings.
