Introduction

I originally made this recipe using sushi grade tuna, but found the texture of the tilapia flakes to be more delectable. I originally made this recipe using sushi grade tuna, but found the texture of the tilapia flakes to be more delectable.

Ingredients

    4 Frozen Tilapia Fillets, defrosted and coarsely chopped
    2 Shallots, finely chopped
    2 scallions, sliced, white part of stem removed
    1/2 tsp of ginger pulp
    1 tbsp Ponzu Sauce
    1 tbsp Yuzu juice
    Pepper to taste
    Red Pepper flakes, optional
    Panko Japanese Style Bread Crumbs

Directions

1. Mix all ingredients in a large bowl.
2. Form mixture into 2 inch balls, then flatten like a burger.
3. Dredge in Panko flour.
4. Lay pieces into a large cast iron pan with about 1/2 inch deep in safflower oil.
5. Cook until golden brown for about 5 minutes, turning once.
6. Drain oil on a paper towel before service.
