Ingredients

    Nonstick cooking spray
    4 cups of butternut squash, cut into cubes
    2 medium onions, chopped
    2 cups carrots, peeled and cut diagonally
    1 tbsp dark brown sugar
    1/4/ tsp salt
    black pepper to taste (optional)
    1 tbsp butter, melted

Directions

Preheat oven to 400. Line large baking sheet with foil and coat with cooking spray. Arrange vegetables in single layer on foil; coat lightly with cooking spray. Sprinkle vegetables with brown sugar, salt and pepper, if desired.

Bake 30 minutes. Stir gently; bake 10 to 15 minutes more or until tender. Remove from oven. Drizzle with butter; toss to coat.

    This was fantastic. I used a dribble of olive oil up front instead on non-stick spray and left off the butter at the end. I loved the sweetness of the roasted onions and carrots along with the squash. I will definitely make this again. - 9/11/10

    This was sooo good! I added some canned corn, which goes really well. I loved that I could eat a lot of it without eating that many calories. I will definitely make this again soon! - 2/17/10
