    Corn Masa Mix, 2 cups
    Salt, 1.5 tsp
    Jalapeno Peppers, 2 pepper
    Onions, raw, 1 medium
    Green Peppers (bell peppers)
    Garlic, 2 tsp (remove)
    *Extra Virgin Olive Oil, 2 tbsp
    Chili powder, 1 tbsp
    Cumin, 1 tsp
    Oregano, ground, 1 tsp
    Lentils, 1 cup
    *Tomato products, canned, sauce, spanish style, 1 cup (remove)
    Yellow Sweet Corn, Canned, 1 cup


Make cornmeal mush by combining corn masa mix with 1 c. cold water. Whisk 3 c. boiling water into the mush and cook for 25min over a double boiler, whisking occasionally.

Saute jalapeno peppers, onion, bell pepper, and garlic in oil unitl soft. Add tomatoes, chili powder, cumin, and oregano.

boil lenitls in 1 cup of water for 15 min. Drain.

In cast-iron skilit, spread half of the mush. Layer the corn and lentils. Cover with tomato filling mixture. Spread remaining mush on top. Bake at 350 for approximately 30 min.

  • I used this for nutritional tracking because it was close to what I had already done. I'm rating this as delicious, even though I haven't actually tried it, because I know for a fact that tamale pie without meat is wonderful. You won't miss it. - 10/22/12
