Introduction

Ingredients

    Corn Masa Mix, 2 cups
    Salt, 1.5 tsp
    Jalapeno Peppers, 2 pepper
    Onions, raw, 1 medium
    Green Peppers (bell peppers)
    Garlic, 2 tsp (remove)
    *Extra Virgin Olive Oil, 2 tbsp
    Chili powder, 1 tbsp
    Cumin, 1 tsp
    Oregano, ground, 1 tsp
    Lentils, 1 cup
    *Tomato products, canned, sauce, spanish style, 1 cup (remove)
    Yellow Sweet Corn, Canned, 1 cup

Directions

Make cornmeal mush by combining corn masa mix with 1 c. cold water. Whisk 3 c. boiling water into the mush and cook for 25min over a double boiler, whisking occasionally.

Saute jalapeno peppers, onion, bell pepper, and garlic in oil unitl soft. Add tomatoes, chili powder, cumin, and oregano.

boil lenitls in 1 cup of water for 15 min. Drain.

In cast-iron skilit, spread half of the mush. Layer the corn and lentils. Cover with tomato filling mixture. Spread remaining mush on top. Bake at 350 for approximately 30 min.

    Very Good
    I used this for nutritional tracking because it was close to what I had already done. I'm rating this as delicious, even though I haven't actually tried it, because I know for a fact that tamale pie without meat is wonderful. You won't miss it. - 10/22/12
