Ingredients

2 cans chickpeas, drained, rinsed, patted dry
2 T extra virgin olive oil
3/4 tsp. salt
SPICE MIX:
1/4 tsp. ground ginger
1/4 tsp. ground allspice
1/2 tsp. ground cinnamon
1/2 tsp. paprika (use sweet not smoked)
1/2 tsp. chile powder (any kind)
1 tsp. ground coriander
2 tsp. cumin
1/8 tsp. cayenne pepper (optional)
Directions
Preheat oven to 350 degrees.
Put drained and patted dry chickpeas in a medium bowl.
Mix together all spices (except salt). (You will have leftover. Just store in an airtight container.)
Sprinkle olive oil, salt, and 2 tsp. of the spice mix over the chickpeas. Pour mixture out onto a large cookie sheet.
Roast in oven for 40-50 minutes until slightly browned and make a rattling sound when you shake the cookie sheet.
Serve warm or cold.
