Introduction

Vegetarian meal, but you can add some italian sausage to the pasta sauce for the meat lovers. Ingredients

    1 Box Jumbo Pasta Shells
    30 ounces of Whole Milk Ricotta Cheese
    8 ounces Part-Skim Mozzarella cheese, grated
    1 Egg
    1 teaspoon Salt
    1/2 teaspoon Black Pepper, ground
    Pinch of Ground Nutmeg
    3 Tablespoons of Parsley, chopped

Directions

Cook pasta shells according to package directions; drain shells.

In a large mixing bowl combine ricotta cheese, 1 cup of mozzarella cheese, egg, salt and nutmeg until combined. Stuff into cooked and drained pasta shells.

Layer in baking pan with your favorite pasta sauce and top with remaining mozzarella. Cover with foil and bake 30 minutes or until heated through.

    I tried it, but did some substitutions. I left out the eggs, but added a box of drained spinach. I also omitted the nutmeg and used lowfat cottage chees. It was delicious! - 1/17/10
