1.5c Fat Free Pancake Mix
1 c water
2.5 c egg beaters
1/2 lb of baked bacon, drained and dried
1 sliced portabella mushroom, sauteed
1/2 c onion, sauteed
1/2 bell pepper, sauteed
2 c of fresh spinach
3 oz reduced fat feta cheese
Directions
Preheat oven @ 350*
While your veggies are sauteeing in cooking spray, mix the pancake mix and the water til smooth. Pour into a sprayed oblong pan. Pour eggbeaters over mix. Top with strips of bacon, veggies and feta. Bake for 30 min. Makes 12 servings.
