Introduction

A tasty quiche reminiscent of spankopita. A tasty quiche reminiscent of spankopita.
Number of Servings: 6

Ingredients

    1 tbsp olive oil
    5 ounces of fresh spinach
    .5 medium onion, chopped
    3 cloves garlic, chopped
    5 eggs
    2 ounces Mozzarella, part skim
    4 ounces feta, reduced fat
    1 cup milk
    .5 cup water
    1/3 cup water

Directions

1. Preheat the oven to 375 degrees and lightly grease a 9 inch pie pan.
2. Saute the onions and garlic in the olive oil until the onions are translucent.
3. Gradually add the spinach and cook until sauteed.
4. In a bowl, combine the eggs, mozzarella, milk, water, and flour.
5. Transfer the spinach, onions, and garlic to the pie pan. Top with feta.
6. Pour the egg mixture over the spinach, onions, garlic, and feta.
7. Bake for 35-45 minutes in the oven.
