Introduction

This was on The Biggest Loser. I added a few things and made some adjustments. This was on The Biggest Loser. I added a few things and made some adjustments.

Ingredients

    Ground turkey--1 pound
    2 cups chicken broth, low sodium
    2 cups low-fat marinara (I like Francesco Rinaldi low-sodium)
    1 cup chickpeas, rinsed and drained
    4 cups fresh kale
    1/2 cup dry whole wheat elbow pasta
    parsley
    italian seasoning

Directions

6 servings

Place marinara, chicken broth, and chickpeas in a large pot and bring to a boil. Reduce to simmering. While this is cooking, mix turkey, bread crumbs, and seasonings in a bowl. Form around 40 mini meatballs. Drop the meatballs and kale into the sauce/broth. Simmer until meat is cooked. Cook pasta in boiling water on the side and then drop that in too. That is it! Enjoy!
