Ingredients

    2 1/4 cups warm water
    3 Tbsp. brown sugar
    2 Tbsp. yeast
    1/3 cup canola oil (or margarine)
    1 Tbsp. salt
    6 cups flour

Directions

Mix together water, sugar, and yeast. Let rise until "bubbly", then add oil, salt & flour. Knead until bread dough consistency (not flaky, not sticky). Add extra flour or water in small amounts as needed. Cover and let rise until at least doubled in size. Flatten into rectangle, then roll lengthwise. Cut in half and place into pans (grease pans if necessary). Let rise until higher than pans. Bake at 425 for 10 minutes, then reduce heat to 350 and bake another 15 minutes. Let cool before cutting.

Baste with melted butter and herbs for a delicious variation.

For "Sweet Bread", substitute 3 Tbsp. sugar for salt. Sprinkle generously with cinnamon sugar before rolling. Baste with melted butter and sprinkle heavily with cinnamon sugar before baking to give the bread a "candied" crust.
