Introduction

Delicious served cold with warm bread, or heat it up and use it as a fresh pasta sauce with chicken. Delicious served cold with warm bread, or heat it up and use it as a fresh pasta sauce with chicken.

Ingredients

    4 lbs. seeded and chopped tomatoes
    1 small purple onion, chopped
    5-7 basil leaves, chopped
    3-4 tsp minced garlic (to taste)
    1/4 cup extra virgin olive oil (more or less to taste)
    3 tbsp. balsamic vinegar (more or less to taste)
    Salt and pepper to taste

Directions

Mix all ingredients well. Let sit for 1-2 hours. Taste and add more ingredients as needed. It should have a little zip from the balsamic vinegar.

Serves 10 as main dish with pasta, or more if serving it with bread as an appetizer. Enjoy!
