Ingredients

2 sweet potatoes (about 2 cups of potato)
1 can black beans (about 1.75 cups)
1/4 cup onions, diced
1/4 cup red peppers
3 cloves garlic, minced
To taste::
lemon juice
cumin
fennel seed, crushed
parsley
salt
Directions
Makes about 4 cups.
1. Bake the sweet potatoes until they're almost done. Peel and slice (cube for quesadillas)
2. While the potatoes are baking, saute the onions, garlic, and peppers in the butter with lemon juice.
3. Rinse and drain canned beans. Cook them with the fennel, cumin, parsley, and salt.
4. Once everything is cooked to your satisfaction, combine onion and bean mix, and wait for the potatoes to finish.
5. In a small oven-safe dish, layer bean mix with potato slices. Top with mozzarella cheese and bake until hot. Finish under the broiler for a nice browned cheese. Serve with warm salsa and greek yogurt (included in the calorie count!)
