This is a great lunch item when you're craving something a little greasy but don't want to wreck your whole day. Ingredients

    1 cup of uncooked spinach leaves
    2 tbsp Light Balsamic Vinaigrette
    1/4 cup of Crystal Farms Asiago and Parmesan Cheese Blend
    2 Slices of Wheat Bread
    1/2 tbsp EVOO for each slice of bread

Directions

Cook up spinach leaves in skillet. Toss leaves with the balsamic vinaigrette while they are cooking. Spread the EVOO over one side of each slice of bread as you would butter bread for grilled cheese. When the spinach is done, distribute evenly on one slice of bread. On top of this, add the 1/4 cup of cheese. Using the same skillet, grill both sides of the sandwich until golden brown. Makes one serving.
