Introduction

I made this cake for St. Patrick's Day. It came out a little spongey but I omitted one of the egg whites. I may try this recipe again with the other egg white. Ingredients

    eggs whites
    Any variety yellow cake mix
    unsweetened applesauce
    lime jello two sm packages
    low fat whipped topping

Directions

Mix the cake mix, applesauce, and the egg whites together for 2-3 min.
Bake according to package directions on the cake mix.
I used a 9 x 13 pampered chef ceramic glazed baker.
Let cake cool completely. My friend who makes this said you can just add the jello, but I let the cake cool all the way. Poke holes all over cake using a fork.
Make jello...I used 3 cups of boiling water and two small packages of sugar free jello. The cake was very tasty and full of flavor. Put the cake in the fridge until party time, top with the whipped topping. I was going to use some extra jello and mix with the whipped topping but i didn't have any so I just used the low fat whipped topping. Everyone loved this cake and no one even knew it was low fat, no sugar. This recipe makes about 12 2x2 inch peices.

    Incredible!
    I used to bake a jello cake decades ago for my children's birthday with any color they liked. Turns out so moist - it is amazingly good! Glad the recipe has made a come back and hope more people will make it! - 3/19/09
