Introduction

These muffins are delicious! Even my kids love them! These muffins are delicious! Even my kids love them!
Number of Servings: 15

Ingredients

    1 1/2 C. flour (wheat or white)
    1 1'2 C. carrots, shredded
    3/4 C. oat bran
    2 apples, peeled & shredded
    3/4 C. flaxseed meal
    1/2 C. raisins
    1 C. brown sugar
    1 C. nuts, chopped
    2 tsp. baking soda
    3/4 C. milk
    1 tsp. baking powder
    2 eggs, beaten
    1/2 tsp. salt
    1 tsp. vanilla
    2 tsp. cinnamon

Directions

Mix together dry ingredients. Stir in carrots, apples, raisins and nuts. Combine milk, beaten eggs, and vanilla. Pour liquid ingredients into dry ingredients until moistened. Do not over mix. Fill muffin cups, 3/4 full. Bake 350 degrees for 15-20 minutes. (yields about 15 muffins) This is really yummy!
