Number of Servings: 15

Ingredients

    1 1/2 c all purpose flour, 3/4 c flax seed meal, 3/4 c oat bran, 1 c brown sugar, 2 tsp baking soda, 1 tsp baking powder, 1/2 tsp salt, 2 tsp cinnamon, 1 1/2 c shredded carrots, 2 shredded apples, 1/2 c raisins, 3/4 c milk, 2 eggs, 1 tsp vanilla.

Directions

Using wooden spoon, mix together flour, flax, oat bran, brown sugar, soda, baking powder, salt and cinnamon in lg bowl. Stir carrots, apples, raisins and nuts. Combine milk, eggs, and vanilla. Pour liquid all at once into dry/friut mixture. Stir until ingredients are moistened. Do not over mix. Fill muffin cups 3/4 full. Bake at 350 for 15-20 minutes. Makes 15 medium sized muffins.
