Ingredients

    6 oz farfalle pasta
    1 tbsp olive oil
    1 med onion, chopped
    4 oz mixture of mushrooms ( I used baby bella, shiitake & oyster)
    3 cloves garlic, minced
    4 cups spinach, thinly sliced
    1 tsp thyme leaves, chopped
    1/8 tsp fresh ground pepper
    2 tbsp shredded Parmesan

Tips

This recipe is modified from Ladies Home Journal- Mar 09.


Directions

1. Cook pasta according to package directions. Drain.

2. In a large skillet, heat oil over medium heat. Add onion, mushrooms and garlic and cook, stirring occasionally, until tender, 2-3 minutes. Stir in spinach, thyme and pepper and cook until spinach is slighlty wilted, about 1 minute.

3. Toss mushroom and spinach mixture with pasta and sprikle with cheese. Serve

    My family loved it! I added fresh basil and shrimp; also grated the Parmesan cheese, which to us made the dish even tastier! Will definetly make again. - 12/6/09

    Great dish! Because I had these on hand, I substituted 1 T of fresh thyme for 1 t of dried and :( a drained pkg of thawed spinach, and it was still great. The combo of onion, mushrooms, parmesan, thyme, garlic, & olive oil gave amazing flavor. With fresh spinach it'd be awesome! I'll make it again - 6/19/09

    To make this even healthier, I substituted whole wheat pasta. Yummy - 7/7/09
