Ingredients

1 lb dry lentils
2 c. chopped carrots
1 medium onion
8 c. water
1 T. salt
Directions
Wash dried lentils and make sure there are no stones. Set aside.
Chop onion. In large kettle spray pam and add onions. Cook over medium high heat until translucent. Add chopped carrots and cook for another 5 minutes. Take pan off stove burner and add 8 cups of water and 1 T. salt. Add rinsed lentils. Put kettle back on burner on high. Bring to a boil and then turn down to medium low heat to keep it simmering. Put the lid on and cook for at least 20 min. I like to cook it for a few hours.
After it cools a bit, you can take a stick blender and blend it as much or little as desired. I blend it about half way, it gets thicker without adding flour or cream.
This makes about 13 1 cup servings.
