It can be eaten hot or cold.Its really good served with a sauce (I use Avocado Sauce, but a cream and wine, or tomato sauce would be as good - depending on your preference. Ingredients

1 x 300g chicken breast (no skin)
1 cup baby spinach or silverbeet (steamed)
2 tsp sundried tomato strips,
1/2 slice lite ham
1 slice low fat vintagecheddar cheese
2 rashers lean bacon (rind removed)
Directions
Preheat oven 165C (329F)
Cut chicken breast horizontally, lengthways, to make a pocket.
Do not cut right through
Layer the spinach, tomato, cheeseand ham in the pocket.
Close the chicken breast and wrap in the bacon rashers
Place in sprayed roasting dish and cook 20 - 30 min until cooked through.
Good served with Avocado Sauce
