Introduction

A tasty meal, quick to prepare, that looks colourful and is low calorie. It can be eaten hot or cold.
Its really good served with a sauce (I use Avocado Sauce, but a cream and wine, or tomato sauce would be as good - depending on your preference.

Ingredients

    1 x 300g chicken breast (no skin)
    1 cup baby spinach or silverbeet (steamed)
    2 tsp sundried tomato strips,
    1/2 slice lite ham
    1 slice low fat vintagecheddar cheese
    2 rashers lean bacon (rind removed)

Directions

Preheat oven 165C (329F)
Cut chicken breast horizontally, lengthways, to make a pocket.
Do not cut right through
Layer the spinach, tomato, cheeseand ham in the pocket.
Close the chicken breast and wrap in the bacon rashers
Place in sprayed roasting dish and cook 20 - 30 min until cooked through.
Good served with Avocado Sauce
Serves 3 (with vegetables)

    Easy to assemble and bake. Came out fully cooked, moist, tender, and very flavorful! I'll be making this again. USA chefs, 165C converts to 329F. I used 325F because my oven is a little fast. - 3/21/09

    So yummy. I can't image it with "silverbeet" which can carry a bitter taste; but, itis a hit with the spinach. I served it with no sauce...and will have to add it next time because my chicken was a bit dry. I will make this again. It is something you can make a day ahead. - 3/22/09
