Quick and easy lemon cookies made using a box of cake mix. These are always a hit at brunches and showers, and are something different to take to a party or offer at a bake sale. Ingredients

    1 package of lemon cake mix
    2 large eggs
    1/3 cup canola oil
    1/2 tsp lemon extract

Directions

Mix the cake mix, eggs, oil, and lemon extract in a bowl.
Roll into small balls, about 3/4 inch. I can usually get around 60 cookies out of the batch.
Bake at 350 for about 6 1/2 minutes. I like to not overbake them, so that they are a little chewy inside. If you want a crispier cookie, bake a little longer.

    Good
    Tasty cookie not too sweet. Lemon taste was not very strong as written. Added zest from one lemon. It helped next time I would use3/4 teaspoon of lemon extract. I sprayed the pan w/oil to prevent sticking. Too runny to make balls so put in fridge to thicken. Using a teaspoon of dough got 27 cookies - 3/3/13
