Introduction

My remake of a favorite soup for my kids without all that sodium. My remake of a favorite soup for my kids without all that sodium.
Number of Servings: 4

Ingredients

    1/2 chicken w/out skin
    8 cups water
    1 lemon
    2 eggs
    1/2 cup orzo pasta
    * You can also add fresh herbs to taste*

Directions

Simmer the chicken in the water to make chicken stock. Once chicken is cooked through (about an hour), strain & let cool. Skim off any fat, squeeze the lemon juice into the broth and reheat. Add the orzo & cook until soft. Beat the eggs, add some of the broth into the eggs to warm through, then add the egg mixture back to the soup pot. If you haven't warmed the egg mixture enough, you'll get an egg drop soup consistency, which is perfectly fine, too! Keep stirring until soup is hot and thick. Add cooked chicken breast pieces &/or fresh herbs, if desired.
