Ingredients

8 oz mushrooms, sliced
1 Zucchini (6 inches), sliced
2 carrots, sliced
2.5 Broccoli stalks, chopped
1 12.4 oz. pkg Mori-Nu Lite Tofu, extra firm, cubed
2 pkg House Foods Mabo Tofu Sauce
Directions
Spray large skillet or dutch oven with cooking oil.
Over medium heat, add Mushrooms, Zucchini, and Carrots.
Cook until carrots are softer but still crunchy.
Add Mabo Sauce and Broccoli, and simmer covered for about 10 minutes.
Add cubed tofu, and simmer for 5 more minutes.
Serve over rice (not included in calories or cooking time).
