Introduction

Great use of leftovers...I always make extra vegetarian chili so this can be a nice lunch a few days later. I use what is in the fridge, but canned chili and veggies would work as well. Ingredients

    2 Whole Wheat Tortilla
    1 cup spicy homemade vegetarian (or any) chili
    1 cup leftover cooked veggies, chopped small
    4 eggs or 1 cup liquid egg substitute
    1/2 cup skim milk or light plain soymilk
    3 T shredded low fat extra sharp cheddar
    4 to 6 crumbled tortilla chips

Directions

Blend the leftover chili, chopped veggies, eggs and milk together. If your chili isn't spicy or flavorful enough this is the time to add an extra pinch of cayenne, cumin, garlic salt or whatever it needs. Lay a tortilla in the pan, pour most of the mixture over it. Place 2nd tortilla and moisten with the rest of the mixture, top with cheese and crumbled chips. Microwave for 10-12 minutes or until it puffs up and is set. Makes 6 generous servings.
