Ingredients
-
bob's red mill 1005 sstone ground whole wheat flour organic, 1.5 cup (remove)
carnation fat free evaporated milk, 2.5 oz (remove)
golden farms clover honey, 2.5 serving (remove)
Almonds, 1 oz (24 whole kernels) (remove)
Raisins, .5 cup (not packed) (remove)
Cinnamon, ground, 4 tbsp (remove)
Water, tap, 6 fl oz (remove)
kosher salt, 1.25 serving (remove)
Yeast, bakers, .125 ounce (remove)
white lily bread flour unbleaches unenriched, 1 cup
hodgson mill unprocessed wheat bran, 0.5 cup (remove)
Directions
Mix hot water and whole wheat flour together in bowl. Cover with plastic and set aside 'til room temp. (approx 1 hour) I usually do this and then go shower, do my makeup, get dressed and ready, etc.
2.add milk, honey, salt, yeast and bread flour and mix until well combined. Add extra flour and knead by hand or in mixer until tacky, but not completely sticky. Place in a well-oiled bowl, cover with plastic, set aside to rise 60-90 minutes. (this is approx. I usually do this and then go to class.)
3.(when I get home from class) Divide dough in ½ and shape loaves. Place loaves in greased bread pans. Cover pans loosely with plastic and set aside to rise again for 90ish minutes. ( Now I do homework)
4.during the final 30 minutes of rising (or whenever you get home from errands or anything else you are doing during this time) preheat oven to 425 degrees. Place pans into oven and immediately reduce the oven temp to 375 degrees. Bake approx 45 – 55 minutes rotating pans once so that they brown evenly, until internal temp of loaves is 190ish degrees and bottom of loaf sounds hollow when tapped.
5.Enjoy bread.
All this is approximate, so don't worry if the time isn't perfect. Your bread will still turn out. I'd like to cite the person I originally got this from, but I can't remember the blog because I wrote it down a few years ago and started using it. Somewhere online.
Also, If you have a dutch oven, no knead bread is extremely easy. Just a quick search for no knead bread should bring up a dozen different recipes.
