This is a yummy, filling breakfast, and you will get a couple veggie servings in! Can be divided into two servings, though it is listed as one, since the recipe makes a lot.

Ingredients

    Egg, fresh, 2 large
    Milk, nonfat, 1/8th of a cup
    Spinach, fresh, 2 cup
    Broccoli, cooked, 0.5 cup, chopped
    Mozzarella Cheese, part skim, shredded 1 oz
    Olive Oil, Extra Virgin, 1/2 tbs

    pepper and garlic powder to taste

Directions

In skillet, heat olive oil on medium, add spinach and cook for 2 - 3 minutes. Add broccoli to warm it up. In a small bowl, scramble eggs and milk. After scrambled, add to skillet, combine thoroughly with spinach and broccoli. Stir as you would with any other scrambled eggs, until cooked. Add mozzarella cheese and cook until melted. Add pepper and garlic powder as you would like.

    Very Good
    I made this for breakfast this morning but altered the recipe a bit [eg. used only 1 egg, 1 tsp of milk, 2 cups of spinach, omitted the broccoli, didn't use any seasoning] and it was delicious. This recipe will definitely be on my breakfast rotation from here on out - 5/7/09
