Ingredients

    2 skinless, boneless chicken breast halves
    ground black pepper to taste
    1/4 teaspoon garlic salt
    2 teaspoons olive oil
    1/3 onion, thinly sliced
    2 tablespoons and 2 teaspoons balsamic vinegar
    1/3 (14.5 ounce) can diced tomatoes
    1/4 teaspoon dried basil
    1/4 teaspoon dried oregano
    1/4 teaspoon dried rosemary
    1/8 teaspoon dried thyme

Directions

Season chicken breasts with ground black pepper . Heat olive oil in a medium skillet, and brown the onion, garlic and seasoned chicken breasts.
Pour tomatoes and balsamic vinegar over chicken, and season with basil, oregano, rosemary and thyme. Simmer until chicken is no longer pink and the juices run clear, about 15 minutes. Serves 2.

    this is definately on my regular rotation. the hubby and i loved it. the tomatoes were a great touch and really cut the acidity of the vinegar. even though i'm full, i still want more! do be aware that the nutrition facts are for 2 servings, so halve them if you only eat 1 chicken breast half. - 3/11/09
