Introduction

This is a great healthy and fairly quick lunch. This is a great healthy and fairly quick lunch.
Number of Servings: 1

Ingredients

    1 tbs Olive Oil
    4-5 Tsp Ginger Root, cut in strips
    3 Cloves Garlic
    2 stalks Celery
    1 medium carrot, cut like the ginger
    3 oz cooked sliced chicken
    .5 servings cooked brown rice

Directions

peel the ginger root, carrot and garlic cloves

Slice the garlic into small pieces
cut the ginger and carrot into matchstick sizes pieces
heat the oil over medium heat
slice the celery into chunks
toss all of the veggies into the oil, toss to coat and let cook 5 minutes or until tender crisp.
Add the cooked chicken and heat through
Add the cooked brown rice and let heat through and combine over low heat for 5 minutes.
serve and enjoy!
