Ingredients

Whole Wheat Lasagna noodles (8)
1 beaten egg
2 c. ricotta cheese or cottage cheese
1 lb. chopped cooked turkey or chicken
1.5 tsp fresh tarragon, or 1/4 tsp dried tarragon
2 T margerine or butter
2 T whole wheat or all-purpose flour
1/2 tsp dry mustard
1/4 tsp salt
1/8 tsp pepper
1.5 skim milk
1.5 c or 6 oz. shredded Swiss or mozarella cheese
Directions
Cook lasagna noodles according to directions. Drain, then rinse in cold water, drain again.
In a bowl, mix egg, ricotta, turkey, and tarragon.
Spray Pam in a baking dish.
Spread 1/3 c. of the filling over a lasagne noodle. Starting from the short end, roll the noodle and place seam side down in the baking dish.
Repeat until all 8 noodles are filled, rolled, and in the baking dish.
In a medium saucepan, melt margerine, and stir in flour, mustard, salt, and pepper. Add milk. Stir and cook until thickened and bubbly.
Gradually add cheese, stirring until melted after each addition.
Pour sauce over lasagne bundles.
Cover and bake in a 375 degree oven for 30-35 minutes.
Let stand for 10 minutes.
You can sprinkle with paprika, parsley, and garnish with fresh tarragon (optional).
