Ingredients

3 Large Green Peppers
1 C Bulgur Cooked
2 Tbsp olive oil
1/2 C Carrots, julianned
1 can Beans, black
1 C Yellow Sweet Corn, Canned
1.5 Cumin seed
2 oz Cheddar or Colby Cheese, Low Fat
2 Garlic cloves
15 oz can Tomato Sauce
1 C Onions chopped
Directions
Cut and seed each bell pepper in half and place into 13x9 in pan sprayed w/nonstick cooking spray
Heat olive oil in pan and cook onions, garlic, and carrots until soft. Add cumin.
mix in cooked bulgur, beans, and corn.
Spoon mixture into prepared peppers.
drizzle tomato sauce over peppers and into bottom of pan.
cover with foil and cook in preheated 350 degree oven for 30 minutes.
remove foil and sprinkle each halk w/cheese.
cook for another 5 minutes or until cheese is melted
