    4 large B.S. Chicken Breasts, shredded
    4 cups 99% fat free Chicken broth
    6 cups water
    1 Cup Long Grain Brown Rice
    1 Cup chopped celery
    1/2 Cup chopped onion
    1 Cup frozen, or fresh green beans, snapped
    2 Cups frozen black eyed peas
    1 Cup, Large frozen Lima Beans
    1T cumin, ground
    1 Garlic glove or 1 tsp garlic powder
    1 Dash of salt
    1 Dash of black pepper
    1 Dash of red pepper


Stew chicken breasts in water. Shred when done.
Add chicken, rice, beans, celery, onion and spices to water and chicken broth. Can use all chicken broth if you prefer. Bring to boil. Cover. Reduce heat. Simmer for 1 hour or more. Makes a large pot of hearty soup. Gets better the longer it sits! Great for quick meals during a busy week.
