Introduction

Delicious and nutritious soup packed with vegetables. Delicious and nutritious soup packed with vegetables.
Number of Servings: 4

Ingredients

    1 onion, chopped
    8 ounces leeks (trimmed weight), sliced
    8 ounces unpeeled potatoes, diced
    4 cups vegetable stock
    1 bay leaf
    8 ounces broccoli florets
    1.5 cups of frozen peas
    3 tablespoons fresh parsley, chopped
    salt and pepper to taste

Directions

Put onion, leeks, potatoes, stock, and bay leaf in saucepan. Cover, bring to boil and simmer for 10 minutes. Stir frequently. Add the broccoli and peas cover, return to boil and simmer 10 minutes. Set aside to cool slightly. Remove bay leaf. Puree in blender until smooth. Add the parsley and season with salt and pepper. Process briefly. Return to saucepan to heat.

    Very Good
    I have just made this soup to enjoy later and it tastes delicious! I dislike broccoli but the flavour is disguised by the peas ( I used frozen petit pois) and it tastes very sweet. I didn't use parsley and only added a pinch of salt as I used two stock cubes. - 5/6/12
