Introduction

This is a favorite, in my family. My husband is a "meat and potatoes" kind of guy, and this hits the spot for him. This is a favorite, in my family. My husband is a "meat and potatoes" kind of guy, and this hits the spot for him.
Number of Servings: 6

Ingredients

    4-5 large potatoes (I prefer red potatoes)
    1 clove garlic
    3 T fat free sour cream
    1/4 C nonfat milk
    2 t dried parsley
    salt
    pepper

Directions

Dice potatoes, I leave skins on. Peel garlic and quarter. Add potatoes, garlic and some salt to a pot and fill with enough water to cover potatoes. Boil until soft.

Drain potatoes, put back in pot and add remaining ingredients. Smash up to desired consistency. I prefer mine a little lumpy.

Makes about 6 1/2-cup servings.
