A vegan version of Rice Krispies treats, using low glycemic sweetener and crisp brown rice cereal. Ingredients

For the Crispies:
- 3 cups crisp brown rice cereal, such as the Erewhon brand
- 1/2 cup natural peanut butter
- 1 cup brown rice syrup
For the Topping (optional, included in nutritional calculations):
- 1/4 cup vegan chocolate chips
- 2 Tbsp soymilk
Directions
1. Heat brown rice syrup and peanut butter over medium-low heat, stirring until combined. Mixture should run off spoon when lifted.
2. Combine with rice cereal.
3. Press into a 9 inch pie plate.
4. To make the topping, use the same pan to melt the chocolate chips and soymilk that was used for the peanut butter and rice syrup.
5. Once the chips melted and combined with the soymilk, pour over the crispies.
6. Refrigerate until the chocolate has set, then cut into 8 slices.
