Ingredients

    #1 Large Eggplant
    #1 Medium Onion
    #.5 cup of Mushrooms, whole
    #1 Clove of Garlic
    #0.5 tbsp Olive Oil
    #4 oz of Pasta
    #1.5 cups of Tomatoes (approx. 3 medium ones)
    #1 cup of Cucumber (approx. 2 medium ones)
    #5 tbsp of Kraft Zesty Italian Dressing (or equiv)

Directions

Put a pot of water onto the stove to boil the water. Mince the garlic and chop the eggplant, onions, mushrooms, tomatoes and cucumbers into bite size pieces. Place .5 tbsp of olive oil into a pan and add the garlic. Add the eggplant, onions and mushrooms after a few minutes and toss occasionally. Once the water in the pot boils add the pasta. When the pasta finishes cooking place it in a large bowl with the tomatoes and cucumbers. Add the finished mixture of eggplant, onions and mushrooms to the bowl and toss with 5 tbsp of Italian dressing.
