Ingredients

1 cup yellow split peas
1 large tomato, diced (or 1 cup diced canned tomatoes)
2 T canola oil
1/2 tsp cumin seeds
1 med red onion, finely diced
5 large garlic cloves, minced or sliced
1 tsp coriander seeds, ground
3/4 tsp ground tumeric
1/2 tsp cayenne (or to taste)
1/4 cup minced cilantro
Directions
Serves 4
1. Soak lentils in cold water for one hour
2. Drain the dal and place in a large saucepan with 3 cups fresh water and the tomatoes. Bring to a boil.
3. Reduce the heat to a simmer, cover and cook until peas are tender, 45 minutes to an hour. Whisk to emusify. Keep warm over low heat.
4. Meanwhile, Heat the oil in a medium skillet on high, Add the cumin seeds. When the seeds have stopped sputtering, add the onion and saute over medium heat about 3 minutes. Then, add garlic and saute until most of the onion has turned dark brown - 5 to 10 minutes. Add the coriander, tumeric & cayenne. Stir and pour mixture over dal.
5. Add the cilantro and salt to taste. heat on low another 2-3 minutes. Serve warm.
