Ingredients

    Sauce:
    1 c plain yogurt
    ½ c nayonaise
    7 oz jar roasted red peppers, drained and chopped
    1/3 c packed fresh basil, chiffonade
    1 large cl garlic, pressed
    salt and pepper to taste

    Sandwiches
    1 med eggplant, sliced in ½” sliced
    salt and pepper
    2 c arugula, washed, dried
    1 t olive oil
    1 t red wine vinegar
    6 ww pita pockets

Directions

To make sauce, whisk all ingred. Season with salt and pepper. Cover and refrig until ready to use. To make sancwiches, Preheat broiler. On rack of broiler pan, arrange eggplant slices in one layer, seasoning with salt and pepper. Broil until golden, about 5 min each side. Toss together remaining ingred. Spread pockets with sauce and fill each with eggplant and arugula.
