Ingredients

5 cups rolled oats
1/2 cup sunflower seeds, hulled
1 cup dry-roasted peanuts
1/2 cup green pumpkins seeds, hulled
1/4 cup brown sugar
1 tsp. vanilla extract
1 tbsp. cinnamon
1/2 cup honey
2 tbsp. unsalted butter
3 oz. banana chips
1 cup raisins, packed
1 cup dried cherries
Directions
Combine oats, peanuts, sunflower seeds and pumpkin seeds in a large bowl. In a small pot combine brown sugar, vanilla extract, cinnamon, honey and butter and melt over medium heat, stirring constantly until all ingredients are combined.
Pour mixture over oats, seeds and nuts. Toss until well-coated. Spread onto a large cookie sheet and bake at 350 for 20 minutes or until golden brown. Stir often to avoid sticking or burning. (Granola will still be somewhat soft until it starts to cool.)
After granola is removed from over, add dried fruit and stir well. Can be stored in an air-tight container for a up to a week. Other fruit and nuts can be used in place of those listed.
Makes about 25 1/2-cup servings.
