Ingredients

    1 tsp dried oregano
    1/2 tsp garlic powder
    1/4 tsp pepper
    6-5oz chicken breast pieces
    Olive Oil cooking spray
    1 1/4 cup low sodium, fat free chicken broth
    1 Tbls lemon zest
    3 Tbls lemon juice (about 1 lemon)
    2 tsp reduced calorie margarine (I used I Can't Believe It's Not Butter)
    1 package (8-10 oz) Israeli Cous Cous (this is a larger "pearl" than standard cous cous, but feel free to change to smaller "pearls")


Directions

1. Combine first 3 ingredients and gently sprinkle on chicken.
2. Spray broiler and put chicken into oven about 5-6" from heat for ~12 minutes or until done, turning once.
3. Meanwhile, combine broth, lemon zest, lemon juice and margarine in pan and bring to a boil. Slowly add cous cous, reduce heat to low, cover and cook for 6-8 minutes or until done.
NOTE: If you are using the smaller pearl cous cous, just stir into hot broth, cover and remove from heat.
4. Spoon cous cous on plate, top with chicken. You can add sliced lemon or oregano for garnish if desired.

This makes 6 servings with 3/4 cup couscous and 5 oz of chicken
